Mushroom Biryani


Ingredients : 

  • Basmati rice - 1 1/2 cup ( serves 4 )
  • Small Mushrooms - 2 cups
  • Red Onion - 1 small ( chopped long )
  • Tomato - 1 1/2  chopped small
  • ginger / garlic paste - 1 tspn
  • mustard / cumin seeds - 1/2 tspn
  • cinnamon stick - 1 small
  • cloves - 2-3 
  • bay leaf - 2
  • cardamon - 1  
  • Curd - 2 tbspn
  • green chilli -2 -3 ( slitted long)
  • Red Chilli powder - 1 tspn
  • Salt - 1 tspn
  • Garam Masala - 1/2 tspn
  • Dhaniya powder - 1/2 tspn
  • ghee/butter (as per wish)
  • Oil - 3 tbspn

Steps:

  1. Soak Basmati rice for 20-30 mins. 
  2. And on side boil mushrooms for 15 mins in salt water . This will reduce the smell of mushroom.
  3. In a big cooker add oil . When the oil is hot add - mustard seeds ,cumin seeds , cardamon , cinnamon stick , cloves.
  4. Then add onions and stir it for 2-3 mins. Once onion is soft , add ginger.garlic paste.
  5. Then add tomatoes . Stir for 3-4 mins.
  6. Then add all the spices (including salt ) and add 500 ml of water.
  7. Once the water is boiling add curd and let it boil for 2-3 mins.
  8. Then add rice , mushrooms and one more 1 big glass of water. ( Tip : for the rice to some separate grains add approx 300 ml water : 1 cup rice ) 
  9. Let the rice cook on medium flame for 2 whistles.
Mushroom Biryani is ready to be served with cucumber/onion Raita !!
